Hobo Foil Packets on the Grill

It's nearing the end of October, but Kansas is hanging on to its warmer days.

Today reached a high of 86 degrees. WHAT THE!?!?!?! I was raking leaves in shorts and a tank top!

Anyways, we had one of our favorite meals tonight that I thought I would share with you. It's a spin off of Betty Crocker's Grilled Cheddar Burgers and Veggie Packs, but we have made it so many times that we have created our own version we like to call "Hobo stuff in foil". So original.

Regardless, this recipe is delicious and uses fairly common ingredients that you might already have on hand (except for ground turkey possibly). 

1/2 lb ground turkey
1 cup cheese
1 tablespoon worcestershire sauce
1 teaspoon seasoning salt
1/2 small onion, chopped (or shredded in a blender...don't judge)
1/4 teaspoon pepper
2 small potatoes, peeled and thinly sliced
3/4 cups frozen corn
3/4 cups frozen peas
1/2 teaspoon seasoning salt
Serving size: 2 (really it's more like 3...I almost always have enough for lunch the next day)
Calorie count: Around 550 per person (those potatoes...killin that calorie thing)

Mix together the ground turkey, cheese, worcestershire sauce and seasoning salt.

You can sub the ground turkey for ground beef if that's what you have on hand. Just know that there's really no way to drain the fat. 

Since Trent doesn't care for chunks of onion, I am sneaky and hide them by blending them up. These frozen chopped onions are a LIFE SAVER and I use them ALL THE TIME. You can find them in the frozen foods section by potatoes.

I use my ninja blender for everythingggg. Onion chopping, herbalife shake making, healthy banana ice-cream mixing.

Sort of looks like snow. But don't eat it.

Mix it all together so it looks really appetizing like this.

Peel and thinly slice your potatoes. Potatoes don't cook very quickly on the grill, so make sure they are small!

Double up a piece of foil and fold all 4 sides up an inch to make a little tray. Spray with cooking spray. (Or use a tablespoon of melted butter for some flavor!)

You will need to make 2 of them!

Sprinkle potatoes on sprayed foil trays.

Tear apart your ground turkey mixture and place on top of potatoes.

Add peas, corn and sprinkle with a little more seasoning salt.

Take another piece of foil and top tightly, making them airtight.

Ask a sexy man to put them on the grill for you. FOUND ME ONE.

Cook over medium heat for 17 minutes.

Put them on a plate.

Cut an "X" in the top.

Fold flaps back.

Eat on the couch watching walking dead with your favorite person in the world.

While your dog drools on your back. 

Short version:
1. Mix together 1/2lb ground turkey, 1 cup shredded cheese, 1 tablespoon worcestershire sauce, 1 teaspoon seasoning salt, 1/2 small onion, chopped. Set aside.
2. Peel and thinly slice 2 small potatoes. Set aside.
3. Create two separate foil trays, by doubling up piece of foil and folding up sides. 
4. Spray tray with cooking spray and sprinkle potatoes into tray.
5. Crumble ground turkey mixture over potatoes, followed by peas and corn.
6. Sprinkle with 1/2 teaspoon seasoning salt.
7. Place piece of foil over trays to make airtight.
8. Use a cookie sheet to transfer foil packets to grill. Place over medium heat for 17 minutes.
9. Create "X" in top piece of foil. Fold back and enjoy!
